With more than 20 years of culinary mastery and a heartfelt connection to the Pacific Northwest, Chef Isabel Chung brings creativity and vision to her role as Executive Chef at Fairmont Empress. Over the past two years, she has helped shape an exciting chapter in the hotel’s dining story, contributing to the reopening of The Bengal, the reimagining of Q at the Empress, and the launch of DASH, the hotel’s new grab-and-go coffee bar.

Chung began her Fairmont journey in 2005 at Fairmont Southampton in Bermuda, followed by years in Seattle, Whistler, and Hawaii. Victoria brought her back to BC, the place she calls home—and to the remarkable ingredients that continue to inspire her.

Chung’s cuisine celebrates Vancouver Island’s bounty. She builds strong relationships with local gatherers, growers, and other purveyors, creating seasonal dishes that reflect the Pacific Northwest—from cold-water seafood to fertile farmland. The region’s ingredients shape her menus and keep her curious.

A committed mentor, Chung is passionate about developing the next generation of culinary leaders. As a member of Les Dames d’Escoffier, she supports greater opportunity for women in the food, beverage, and hospitality industries. She is also working to revive Fairmont Empress’s culinary apprenticeship program, helping emerging talent grow through mentorship.
