Nicole Hynes

Nicole is a hospitality entrepreneur and event producer with a proven track record of building standout brands and experiences. As Partner at Sand & Pearl Oyster Bar (est. 2017), she led the concept, design, and launch of the award-winning seasonal restaurant and event venue—named one of Air Canada’s Top 10 Best New Restaurants in 2018.

 A former founder of Sweetgrass Brewing Company, Nicole built a loyal following through product integrity and strong partnerships, leading to a successful exit. She also spent 16 years leading The Auld Spot Pub, cultivating community, creative marketing, and operational excellence before selling the business during the pandemic. 

Most recently, as Senior Producer with EVNT MGMT, Nicole collaborates to produce large-scale events. Her work combines creative vision with operational precision—bringing people together through food, culture, and experience.
